Recipe
Ingredients:
- 2-3-pound Porterhouse or T-bone steak (cut 2-3 inches thick)
- Coarse sea salt
- Black pepper, freshly cracked
- Extra virgin olive oil, preferably Tuscan (we recommend ArteOlio)
- Fresh rosemary sprigs
- Lemon wedges for serving
Instructions:
1. Remove the steak from refrigeration 30 minutes before cooking to bring it to room temperature.
2. Pat dry and season generously with coarse salt and freshly cracked black pepper on both sides. Drizzle lightly with extra virgin olive oil and rub the seasoning into the meat.
3. Preheat your grill to 450-500°F or, if using a grill pan, preheat over medium-high heat until smoking.
4. Sear the steak for 5-7 minutes on the first side, until a crust forms.
5. Flip once and cook for another 5-7 minutes, adding rosemary sprigs to the grill or grill pan in the last two minutes.
6. Check the temperature of the steak using a meat thermometer. Bistecca alla Fiorentina is traditionally served rare, with an internal temperature of 120°F.
7. Rest the steak for 10 minutes before slicing and serving.
8. Drizzle with extra virgin olive oil, add a pinch of flakey sea salt and serve with a wedge of lemon to finish off the dish.
